Ingredients:
5 large ripe (preferably vine) tomatoes.
1 ripe avocado
1 spring onion
1/4 cup ground almonds (freshly done yourself, not packet)
1 cup broth from Swiss Vegetable Bouillon
1/4 teaspoon dill seed
Dash cayenne pepper
Sea salt & cracked black pepper to taste
Directions:
- Place all of the ingredients except one of the tomatoes into a blender.
- Depending on whether you would like to serve the soup warm or cold, place the mixture in the refrigerator or heat it in a pan.
- Top the soup with sliced tomatoes and serve.
