To spice up your party, you can make Stuffed Red Pepper Bell
Ingredients:
-5 big red peppers
-1 small cup of whole-wheat pasta
-5 prunes chopped
-1 tablespoon dried raisins
-6 crushed walnuts
-1/2 cup of low fat milk cottage cheese
-Salt to taste + black pepper
-5 mint leaves for garnishing.
Boil pasta in salted water. Wash the red peppers and clean and dry them on a kitchen towel. Core them. Pre-heat oven to 350 degrees F. Moisten the baking dish with a light mist of any cooking spray. In a mixing bowl, mix the pasta, prunes, raisins, walnuts, cottage cheese, salt and pepper.
Spoon out the mixture into the Red peppers. Place them on the moistened baking dish and transfer them into the oven. Grill until the outer side of the peppers crinkle and become soft. Garnish with mint leaves and serve. With a moderate calorie count of approximately 160 calorie per pepper, it can be a great item for weight loss diet or entertaining parties.

Mix together vegetable stock, soya sauce and any vegetable oil and keep it aside. Cook brown rice, drain and leave aside to cool. Heat olive oil in a non stick pan and add veggies of your choice into it. Toss the vegetables and lower the heat. Cook until the vegetables soften up, occasionally tossing it.
Add the rice and mix it well with the sizzling vegetables. Push the rice mixture around the corners of the pan and pour the vegetable stock into the middle. Let the rice absorb the mixture into it until the grains become fluffy again. A wholesome high fiber recipe, it is sure to tickle your taste buds without guilt pangs.
